Ingredients
- 6 cups Special-K
- 1 (12 oz.) bag butterscotch chips
- 1 cup peanut butter
- ½ cup chopped peanuts
| Directions
- In a double broiler melt both the peanut butter and butterscotch stirring until all melted and a smooth consistency.
- While still hot stir in the nuts; then fold into the Special K.
- Spoon the mixture out on to parchment covered cookie sheets, or like it did use an open ended ice cream scoop and drop on the sheet.
- Let sit for about 2 hours or more until hardened enough to pick up with your hands. Place in the fridge to cool off if you would like to eat some a little sooner.

My mom makes these every year, though her recipe doesn't include the nuts. Enjoy this easy recipe that you can rationalize as being sort of healthy. ^_~
