Special Kookies


Ingredients
  • 6 cups Special-K
  • 1 (12 oz.) bag butterscotch chips
  • 1 cup peanut butter
  • ½ cup chopped peanuts
Directions
  1. In a double broiler melt both the peanut butter and butterscotch stirring until all melted and a smooth consistency.
  2. While still hot stir in the nuts; then fold into the Special K.
  3. Spoon the mixture out on to parchment covered cookie sheets, or like it did use an open ended ice cream scoop and drop on the sheet.
  4. Let sit for about 2 hours or more until hardened enough to pick up with your hands. Place in the fridge to cool off if you would like to eat some a little sooner.

My mom makes these every year, though her recipe doesn't include the nuts. Enjoy this easy recipe that you can rationalize as being sort of healthy. ^_~
